Greek Olive Oil
High up in the mountains of Kalamata, where this outstanding Kalamata Olive Oil is produced, sprawled sleepily on the hillside, is the ancient village of Doli. This region of Greece in the Central Peloponnese produces the best olives and the finest Organic Olive Oil in the country.
This particular variety of Kalamata olive that produces this Olive Oil grows well on mountain slopes and produces very small fruit. This Greek Olive Oil is produced from the high ratio of skin to flesh gives this Organic Olive Oil its coveted aromatic qualities. Unlike other types of Olive, the stones of these Olives that produce the Best Olive Oil cannot be crushed during pressing, which reduces the yield of this Organic Olive Oil and increases the intensity of the Olive Oil while retaining low acidity. To prepare this Kalamata Olive Oil, the olives are harvested by hand in November, collected in large sacks and transported immediately by donkey to the local olive press where it is cold - pressed into the Best Olive Oil according to traditional methods.

As the grove that produces the Olive Oil contains only a small number of ancient trees, the production of Doli Extra Virgin Greek Olive Oil is limited to "boutique" presses, hence the term Single Estate Extra Virgin Organic Olive Oil.
This Organic Olive Oil is produced from olives that are lovingly grown without any chemicals and pesticides and are certified Organic thus producing the finest Organic Olive Oil. The trees produce this Greek Olive Oil, are pruned twice a year by the Mavroides family, who have been tending the olive trees and producing this Kalamata Olive Oil for the last four generations. Originally shepherds in Pigadia, harsh weather conditions brought the family down to the more gentle pastures of Doli, where they turned their attention to the production of this best Kalamata Olive Oil.
